Here in Wisconsin we have had below freezing temperatures lately which chills you down to the bone! The best way to warm up is with a nice bowl of chicken soup. This version uses bone broth which adds extra protein and nutrients to help you ward off any seasonal illnesses coming your way. Double this to freeze and save for a later date. Don’t forget to make some fresh focaccia bread to go with and soak up all that yummy broth! Enjoy!

Ingredients

Directions

Heat large pot or dutch oven over medium-high heat

Add olive oil and let warm
3.
Salt and pepper both sides of chicken breasts
4.
Place chicken in pot and sear for 3-4 mins on each side

Remove chicken
6.
Sautee onions, carrots and celery in olive oil until soft and onions are translucent
7.
Add minced garlic and cook for 30-60 seconds
8.
Pour in broth and boil
9.
Add chicken back into pot
10.
Add bay leaf and potatoes
11.
Simmer until chicken is cooked through and potatoes are soft
12.
Remove chicken and shred
13.
Remove bay leaf, add chicken back in and season with salt and pepper
14.
Serve hot with fresh bread

Recipe Tips!

  • When shredding chicken, use a kitchen aid or hand mixer to make the job fast & easy!
  • In place of bone broth, you could use regular chicken broth or better than bouillon
  • My favorite potatoes for this recipe are Yukon gold but you can use whatever you have in your kitchen
  • Want to cut down on cook time? Buy a rotisserie chicken from the store and add in at the end!
