Sautee onions, carrots and celery in olive oil until soft

Add garlic for 30 seconds
3.
Pour in broth, add chicken
4.
Add bay leaf and simmer until chicken is done
5.
Remove chicken and shread
6.
Add potatoes and cook until soft
7.
Remove bay leaf, add chicken and serve
