Flat Top Fajitas
If you’re anything like my family, you are eating Mexican food at LEAST once a week. In the summer when we have our Weber slate on the deck we are always looking for new ways to use it & this fajita recipe is a great quick, easy way to get it fired up on a week night! The way the griddle top sears the peppers and chicken perfectly makes everything extra tasty.
Ingredients
Directions

Start prep by cutting chicken, peppers and onions in long, thin, slices. Add to large mixing bowl

Mince garlic and add to bowl along with the oil & fajita seasoning. Mix well
3.
Warm griddle over medium-high heat
4.
Add mixture to griddle and sear for 5-6 minutes, then mix and cook until chicken is done
5.
Remove mixture and add tortillas to griddle to warm
6.
Serve in tortillas with cheese, sour cream and pico if desired
Recipe Tips!
- When cooking you want to get a nice sear on everything but don’t overcook, you still want a little crunch to your peppers
- I like to make it quick & use a packet but feel free to make your own fajita seasoning
- If you don’t have a flat top, you can make this recipe by putting everything in the oven at 375 degrees for 15-20 mins
