If you are a garlic lover like I am, this will bring your potato soup to a new level. With the strong flavor of the fresh garlic, the creamy potatoes and the cheese, this is easily the most comforting soup to make! It comes together really easily and you will be sure to have leftovers with this recipe!

Preheat a large stock pot or Dutch oven on medium-high heat

Add butter and allow to melt
3.
Add onions and cook until soft and traslucent
4.
Add garlic and flour, mix constantly until you've formed a thick paste
5.
Slowly add broth and potatoes, bring to a boil then lower to simmer
6.
Simmer on low until potatoes are cooked
7.
Blend with immersion blender
8.
Mix in milk and cream, then remove from heat and stir in cheese
9.
Serve hot with bread or a salad

Recipe Tips!

  • Make sure to use fresh garlic, not canned!
  • Do not buy pre shredded cheese, the extra step with help prevent a bad texture and make sure this tastes good re-heated
