Potato Taco Bowls
This has been one of my favorite quick week-night dinners lately. The crispy potatoes with the flavorful ground beef make the perfect base for all of your favorite toppings.
Ingredients
Directions
1.
Pre-heat your air fryer or oven to 400 degrees

Peel potatoes and cut into small wedges
3.
Add potatoes to bowl with olive oil, paprika, garlic powder, salt & pepper
4.
Mix potatoes well, coating every piece and pour into pre heated air fryer (or oven)
5.
Cook for 15-20 mins until golden brown
6.
While potatoes are cooking, heat a skillet to medium-high heat and add ground beef
7.
Cook according to taco seasoning packet instructions
8.
When potatoes and beef are done, you can assemble your bowls
9.
Add potatoes to the bottom, add ground beef, cheese, pico and sour cream
10.
Dig in
Recipe Tips!
- For more flavorful taco meat, sear both sides of the meat before breaking it up
- You can use a queso instead of shredded cheese for a cheesier bowl
- Feel free to add whatever toppings you enjoy
- I always use my air fryer because it makes the potatoes extra crispy but if you don’t have one, your oven will work just fine
